Home-Made Avocado PestoPrint This
25 basil leaves
2 garlic cloves
1 tablespoon of organic pumpkin seeds
1 pinch of himalayan salt
2 teaspoons of extra-virgin olive oil (I use a 100% non blended, cold Pressed Italian oil to enhance the taste)
1/2 cup of water
Step 1: Cut and pit the avocado using a spoon
Step 2: Dice the avocado halves
Step 4: Peel the garlic cloves and cut them in half
Step 5: Pour the ingredients in the blender, adding the oil, the pumpkin seeds and the basil
Step 6: Add half cup of water and a pinch of himalayan salt
Step 7: Blend ingredients together until you obtain a creamy but still textured creme
Step 8: Mix with pasta and enjoy!
My favourite pasta formats for this recipe are cavatappi (as in the pictures), fusilli or spaghetti. The sauce texture should not be too smooth, try to keep a bit of the crunchiness of the pumpkin seeds in!
